Cheese Mayonnaise Sandwich (1943)

This recipe was adapted from Victory Binding of American Woman’s Cook Book. I’ve halved the recipe and cut back the salt.

1 hard-cooked egg-yolks
2 teaspoons melted butter
2 1/2 oz. grated mild cheddar cheese
1/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon mustard
1 tablespoon vinegar

Rub the egg yolks and melted butter until they make a smooth paste. Add the grated cheese, salt, pepper and mustard, mixing thoroughly. Stir in the vinegar and spread between buttered slices of bread.

Plus up ideas: Seasoned slice of tomato or sliced dill pickles and the grilled cheese treatment (I used mayo since there was already butter in the filling but to thine own self, knock out).
