Sliced Chicken Sandwich 1920

This recipe was adapted from The Calendar of Sandwiches and Beverages

Sliced Chicken Sandwich

Ingredients:

  • 2 slices of bread

  • Green pepper butter (see below)

  • 2 thin slices of roasted chicken breast

  • 1-2 teaspoons mayonnaise

    Butter bread with green pepper butter. Lay over top sliced chicken. Spread mayonnaise onto chicken. Close, cut, and enjoy!

    Plus up ideas: Baby spinach and/or blue cheese and/or bacon

Green Pepper Butter

  • 1 green bell pepper

  • 1/4 cup butter

    Slice 1 green bell pepper and remove the seeds plus all the white portion. Cook in boiling water until soft; drain well and finely chop, drain again and rub through a sieve (or bust out that food mill, it’ll be a lot easier); there should be about 1 tablespoon of pulp. Cream 1/4 c. of butter and add pulp gradually, stirring constantly.
